Description: tom 3Tom James joins The Venue Scottsdale as Vice President of Operations and General Manager. 
As The Venue Scottsdale’s newest corporate officer, Tom will direct the day-to-day operations of this popular special event facility located in Old Town Scottsdale in addition to developing the company’s long term goal to open ten new locations in the near future.   
In his new role, Tom will work closely with all areas of The Venue in order to both grow Valley awareness of this unique facility in addition to increasing and improving the services currently offered.   
With over 20 years of experience in the hospitality industry, Tom has extensive hands-on expertise in sales, staff development, and food service delivery at the highest level.  He has enjoyed success in various positions including Director of Catering & Conference Services at a variety of four-diamond hotels, Director of Food & Beverage at the legendary five-diamond Lodge at Torrey Pines as well as General Manager for a 2,000 acre resort and golf club in central Idaho. 
Although a native of Seattle, Tom attended Arizona State and has worked in the area on various occasions in both hotels and private businesses.  Tom states, “My family and I are excited to return to the Valley of the Sun.  This is where I went to college, got married, and worked.  I’ve made and maintained many life long relationships here.  This is truly returning home for me!  Not too mention my two daughters are excited to once again enjoy the warmth and dryness year round.”
Tom looks forward to growing his relationship base with community organizations, the outstanding hospitality and destination management companies in the area as well the numerous corporations who do business in the area.

New Retractable Roof Coming Summer 2011!
The Venue Scottsdale is currently installing a retractable roof over the center courtyard. This roof will be a one-of-a-kind feature that will allow for a whole new way to add sun or stars to any event. 
We will be hosting a special celebration upon completion -  stay tuned for more information in the next issue.

Lamb Tagine
Description: lamb
Ingredients

3 tablespoons olive oil, divided
2 pounds lamb meat, cut into 1 1/2 inch cubes
2 teaspoons paprika
1/4 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground cardamom
1 teaspoon kosher salt
1/2 teaspoon ground ginger
1 pinch saffron
3/4 teaspoon garlic powder
3/4 teaspoon ground coriander
2 medium onions, cut into 1-inch cubes
5 carrots, peeled, cut into fourths, then sliced lengthwise into thin strips
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 lemon, zested
1 (14.5 ounce) can homemade chicken broth or low-sodium canned broth
1 tablespoon sun-dried tomato paste
1 tablespoon honey
1 tablespoon cornstarch (optional)
1 tablespoon water (optional)

Directions

Place diced lamb in a bowl, toss with 2 tablespoons of the olive oil, and set aside. In a large resealable bag, toss together the paprika, turmeric, cumin, cayenne, cinnamon, cloves, cardamom, salt, ginger, saffron, garlic powder, and coriander; mix well. Add the lamb to the bag, and toss around to coat well. Refrigerate at least 8 hours, preferably overnight.
Heat 1 tablespoon of olive oil in a large, heavy bottomed pot over medium-high heat. Add 1/3 of the lamb, and brown well. Remove to a plate, and repeat with remaining lamb. Add onions and carrots to the pot and cook for 5 minutes. Stir in the fresh garlic and ginger; continue cooking for an additional 5 minutes. Return the lamb to the pot and stir in the lemon zest, chicken broth, tomato paste, and honey. Bring to a boil, then reduce heat to low, cover, and simmer for 1 1/2 to 2 hours, stirring occasionally, until the meat is tender.
If the consistency of the tagine is too thin, you may thicken it with a mixture of cornstarch and water during the last 5 minutes.

A man and his wife were having some problems at home and were giving each other the silent treatment. The next week the man realized that he would need his wife to wake him at 5.00 am for an early morning business flight to Chicago. Not wanting to be the first to break the silence, he finally wrote on a piece of paper, "Please wake me at 5.00 am."
The next morning the man woke up, only to discover it was 9.00 am, and that he had missed his flight. Furious, he was about to go and see why his wife hadn't woken him when he noticed a piece of paper by the bed ... it said... "It is 5.00am; wake up."

Chef recipe of the month


Sautéed salmon
Achiote marinated salmon served with grilled asparagus and creamy whipped potatoes
  • 2-6oz salmon fillets
  • 1-bunch asparagus
  • 8-oz mashed potatoes
  • 2-oz lemon dressing
  • 2-oz achiote marinade
Cut the salmon in half and rub with the achiote marinade and season with salt and pepper, in a non stick pan sear the salmon on all sides. Marinade the asparagus with the lemon dressing and place in a grill pan, cook until almost tender. On a plate place the asparagus, potatoes and salmon, drizzle the salmon with the remaining achiote marinade and serve.

Achiote marinade
  • 3 TBS achiote paste
  • 1 garlic clove-crushed
  • 1 TBS chopped basil
  • 1 TBS chopped parsley
  • Olive oil

In a bowl mix the achiote, garlic, basil and parsley, add olive oil until smooth season with salt and pepper

  • 4 TBS fresh lemon juice
  • 1 tsp Dijon mustard
  • 4 TBS olive oil
  • Salt and pepper to taste
Mix in a blender
